The
time of harvest is rigorously chosen in order to obtain the optimum
maturity of the grapes in
order to make fresh, structured and fruity wines. The grapes are harvested
early in the morning, just after dawn, when the dew has evaporated.
Vinification :
Grapes are painstakingly selected, stalks put apart.The temperature is
lowered to extract the choicest aromas and color. The grapes are then
fermented, parcel by parcel, in stainless steel tanks.
Fruity,
fresh and subtil wines are matured in stainless steel tanks. We use french
oak barrils to age more structured, complex and generous wines. Oak is
used to microoxygenate the tannins. It is not a way to aromatise the wine
with a fake vanilla taste that hides the authentique flavours of the
product. The blending is operated before the wine is aged for the fruity
wines and after for those in oak barrils, just before bottling.
